Cheese is an infinitely variable product. It’s flavor, consistency, and overall functionality can fluctuate daily due to milk seasonality, changes in plant ambient conditions, and even climactic changes. In order to maintain a year round, consistently level cheese product, dairies have had to depend on the innate skills of their cheesemakers to maintain consistency despite variances. These age old methods, however, are slowly becoming costly with the advent of mechanization, and, combined with the high output demands for cheese by the food industry, almost obsolete.
In order to meet the demands for a high output, consistent, year round cheese product and to aid the cheesemaker in doing so, IMAC has developed a line of cheese functionality supplement products. The media and cultures found in this line have been designed to significantly improve the flavors, moisture retention, and overall functionality of the final cheese product. This is accomplished by naturally amplifying the performance of the existing starter systems, much like a high performance automobile uses fuel treatments to work optimally in different weather conditions. IMAC’s Functionality Supplements therefore permit optimum and consistent performance in different, challenging environments.
IMAC ENHANCE is a secondary starter system which is designed to augment and strengthen the flavor and functionality of the existing starter components. By employing a unique blend of complimentary bacteria, nutrients, stimulants, and enzymes, IMAC ENHANCE Starter Cultures and Media boosts the performance of the existing starter almost tenfold. By tuning the starter system to be super-efficient, the ENHANCE starter system inadvertently permits for significantly increased yields!
To return to the analogy of the automobile- when an engine is treated with a fuel/ octane supplement, it is therefore tuned for optimum fuel management. This allows not only for a smoother ride, but because the engine is tuned, it also allows for better fuel consumption, allowing you to travel further for less money. IMAC’s ENHANCE works in the same fashion- by creating a complimentary and super-efficient cheesemaking environment, ENHANCE not only makes helps make consistent cheese, it makes more cheese period! Increases by as much as 1.5% in cheese yields have been reported by ENHANCE customers.
ENHANCE Starter Media is based on a unique blend of enzyme hydrolyzed solids and stimulants which serve to compliment the nutrient base found in IMAC’s ERADICATE and ELIMINATE Primary Starter Media. When the primary, inoculated media is mixed with the inoculated ENHANCE media, the combinatory effect creates not only the plentiful base for maintaining/ amplifying product flavor and functionality, but also forms the base for the yield enhancing reactions.
The by-product of the enzymatic and pH processes of the combined starter bacteria, in combination with the properties of the media stimulants, serves to structurally modify all available protein in the cheese vat. These slight protein modifications, when applied to the cheese curd matrix, permit for maximum moisture and fat retention, thereby increasing the overall yield in the final cheese product.
IMAC Enhance, when used at 1.5-2.0% addition in the vat, has displayed an increase of ten percent of the existing yields. For example, a plant processing 1,000,000 lbs of milk per day with 10% yields will get 100,000 lbs of cheese. With ENHANCE Media, the same quality cheese will be made at an output of 110,000 lbs, the difference being 10,000 lbs of additional cheese per day!
Any system that produces such tremendous yields and performance will have its skeptics. That is why IMAC has researched its ENHANCE Starter System in the field for over three years, and has established its use as a proven, US Codes of Federal Regulations Approved system (CFR #). The system, which is Government Approved, Lab Tested and Kosher Approved, is currently patent pending and is in heavy use in the United Kingdom and United States with startling success (see inset).

IMAC Mini Jumbo (MJ) Cultures
IMAC’s Mini Jumbo (MJ) Cultures are functionality supplements made only for Mozzarella and other pasta filata type Italian cheeses. Since stretch, blistering, and colour are all premium characteristics in the production of Mozzarella and other Italian cheeses, IMAC formulated its MJ Cultures to ensure that all of these factors are expressed to their highest functionality. Designed to be added directly to the vat, the MJ cultures are an easy and economical way to maximize and enhance the functionality of the final cheese product. These cultures have found a niche in high-volume cheese production, where application of the MJ units have reduced production downtime and product rejection by means of improved overall quality and performance. These cultures are almost a standard for high moisture pizza cheeses, and we cannot recommend them highly enough to our customers.
